Yunnan Tea Cake.
Pu-erh is a unique fermented tea from Yunnan Province, China, known for its deep, earthy flavor and aging potential. It is categorized into raw (sheng) and ripe (shou) types, often sold in compressed cakes, and is loved for its mellow, often woody or chocolaty taste. It's brewed using gongfu methods and often enjoyed as a digestive aid.
Types of Pu-erh Tea
- Raw (Sheng) Pu-erh: Traditionally processed, sun-dried leaves that are fermented slowly over years or decades, resulting in a vibrant, complex, and sometimes bitter flavor profile that mellows with age.
- Ripe (Shou) Pu-erh: A modern method developed in the 1970s, where tea leaves undergo an accelerated fermentation process called "wet piling" (wo dui). This results in a dark, earthy, and mellow tea, often with woody or cocoa notes.
Key Characteristics & Production
- Origin: Exclusively produced in Yunnan Province, China.
- Fermentation: Unlike black tea, Pu-erh undergoes microbial fermentation, which changes the chemical composition of the leaves.
- Aging: Like fine wine, many Pu-erhs improve with age, often losing bitterness and gaining complexity.
- Packaging: Commonly found in compressed forms (cakes, bricks, tuocha) but also available as loose-leaf.
Brewing and Usage
- Rinsing: Because it is fermented, it is highly recommended to rinse the leaves with hot water and discard the first infusion to remove dust and wake up the leaves.
- Method: Best prepared using a gongfu approach, using high temperatures (95°C-100°C) and multiple short infusions.
- Caffeine: Contains caffeine, with concentrations often higher in aged leaves.
Health Considerations
- Benefits: Often consumed for digestive health and sometimes linked in animal studies to reduced fat accumulation.
- Side Effects: High caffeine content can cause dizziness or palpitations in sensitive individuals, and potential interactions exist with certain medications.
